In order to grown mushrooms at Fat Beet Farm, we created a “cave” inside a used insulated shipping container. By controlling the right amount of humidity, light, and airflow, we are able to simulate forest-floor-like conditions that allow the mushrooms to flourish!
They begin life in the dark, inoculated into a variety of organic substrates like coffee, barley, or corn. Once the mycelium colonize, we turn on the lights and they shoot right up! We are able to grow a variety of fungi including Blue Oyster, Lion’s Mane, Shiitake, Enoki, Maitake, Reishi and more. They are all scrumptious, teeming with health benefits, and we love to cook them in as many farm recipes as we can.
